This will only damage its horns if the parried weapon-strike deals out damage equal to, or greater, than the damage-points of the Minotaur's horns (each horn will have 2-D20 +15 damage-points per level of the Minotaur). In any case, the Minotaur's horns will turn a weapon strike on a % roll of 51+, thus receiving no harm (just as armor does).
